3:1 gelling powder based on xylitol for food, limited use, with sweetener.
1 kg tin with the 3:1 ready mix for the production of 4 kg jam/preserve (incl. instructions). You only need 3 kg of fruit. For jellies please use a ratio of 2.5:1. With this 3:1 ready mix you can make delicious fruit spread - with xylitol as a sweetener. Pectin, citric acid and calcium citrate are also included for the perfect gelling result.
Instructions for use: 3:1 gelling sugar should be used in the same way as 3:1 gelling sugar. Please stir the contents of the tin well before use , so that the pectin contained is better distributed and a homogeneous mixture is guaranteed. Only use clean jars and boiled lids. Place 3 kg of clean, finely chopped fruit and 1 kg of gelling sugar in a large saucepan. Boil the mixture at and let the mixture bubble for 4 minutes until the fruit is soft. Stir regularly, even while filling. Fill the mixture into jars as hot as possible and seal them immediately. Then turn the jars upside down and leave them to cool. The fruit spread will keep for at least a year in clean containers if not refrigerated.

For your information: The recipe of our gelling sugar has not been changed, but we are now correctly labelling the dextrose it contains, which comes exclusively from the raw material pectin, . Pectin, which is used for gelling, naturally contains a certain amount of sugar, which is important for gelling. As this content varies naturally, sugar, in our case dextrose, must be added to the pectin during production. We therefore achieve an average content of 0.9 grams of sugar per 100 grams of gelling sugar - a very low proportion in our opinion. As we are constantly testing and improving our products and processes, we realised during the last test of our gelling sugars that the sugar content needed to be recalculated and the recipe information adjusted. Unfortunately, it is not possible to do without this small amount of sugar.
